Merry Christmas! And cookie recipes!

Yea I said it and I do wish you a very Merry Christmas and a Happy New Year. I appreciate you so very much! I’ve been busy, can you tell? A last minute trip to Mexico was probably bad timing but I am ever so happy I went. My holiday party a few days before that was just perfect, I got to spend some time with you and most of it before I lost my voice. Many of you have asked for the recipe for the cookies I made, find them below. The shop will be closed through the holidays, reopening next year on January 2, back to reality!

Grain free shortbread (these didn’t really have a shortbread texture, but they were delicious)

I made my own almond flour in a coffee grinder, but you can buy it of course

1 cup almond flour

3 tablespoons butter

1.5 tablespoons honey

pinch of sea salt

vanilla

I put them in a baking dish and cut after cooling, but they work as cookies too. 350 for 10 minutes

 

Flourless Peanut Butter Cookies (in the shop today and everyone is going nuts!)

1 cup peanut butter

1 cup sugar (I use coconut sugar)

1 egg

That is it, but I add vanilla and almond extracts, and today I added chopped chocolate

10 minutes at 350
